This sweet and savory jam will give your burgers, chicken or chops a kick that is sure to knock your socks off! It is a delightful combination of crispy bacon, caramelized onions sweetened by the honey and the tangy zip of balsamic vinegar with a touch of heat from the cayenne pepper.

1 1/2 pounds bacon, chopped
1 Tablespoon butter
1 large yellow onion, chopped
Pinch of salt (the bacon adds plenty!)
1/2 cup bourbon (plus a splash more)
1/2 cup honey
1 1/2 Tablespoons balsamic vinegar
Pinch cayenne pepper (optional)
In a cast iron or other heavy bottomed pan, cook the bacon until crisp. Remove the bacon onto a paper towel lined plate. Drain the bacon grease into a container then add one tablespoon of the grease back into the pan.
Add the butter and chopped onion plus the pinch of salt and cook over medium heat for 10 minutes.
Add the honey and bourbon and bring to a boil on high heat. Boil for about two minutes, stirring often. Add the balsamic vinegar and boil for another minute.
Add the bacon back to the pan and reduce heat to medium low for about 6-8 minutes, until the mixture is dark and thick. Season with the pinch of cayenne pepper.
Serve immediately, or refrigerate until ready to use. Microwave briefly to warm if refrigerated. Makes four servings.
